The purpose of our research is studying the varations in milk with increased somatic cells in connection with casein index. We examined 710 patterns arrived to IZS of Puglia and Basilicata which were subdivided in two classes according to the season (spring and summer) and somatic cells number (<300.000/ml, >300.000/ml). The obtained results allowed us to verify how the somatic cells increase leds to a decrease of casein index in both season terms. This alteration involves a reduction in dairy yield and then in curd quality.
